I'd like to give hot water canning a try this year, but I want to keep my costs minimal. I have a really deep stock pot that should hold a couple of small jars at one time.

A canning recipe book said a canning rack can be fashioned out of a round cake cooling rack or attaching canning screw lids together. I don't have either of those things, but the jars come with the screw bands, right? Anyone ever tried these as a canning rack? Any other suggestions for DIY canning rack?

You can do that with the canning rings! The idea being that the glass jars are not resting on the bottom of the pot but surrounded by the hot water. you will need for buy a jar lifter and I highly recommend a canning funnel!

I also recommend beware of the canning jars available at wally world that are made in China.

This winter I did find a smaller diameter rack in a junk shop. Think I paid a buck for it. cheers Look around, hit up garage and yard sales, you may get lucky through the season.

A steamer rack works too, just something to keep the jars off the bottom of the pot. Just be sure the pan is deep enough to have at least an inch or two of water over the top of jars. You will be hooked after you make your first jelly or pickles!!

Little jo, what brand jars are they? The package should be clearly labeled where the jars were manufactured. I have heard anecdotes that the jars, labeled as made in China, have more frequent failure,eg: cracking when processing, perhaps because of thinner glass? I don't know.
For me I would rather pay the extra two bucks for the glass made in USA, where there seems to be better and more consistent quality control... So many products from China seem cheaply made, at least it seems that way to me.
Some of the countries in Europe also make quality glass.

They are 'BALL' jars and lids, I could not find a made in place. I've been using Ball or Mason jars for yrs. If you find out what 'brand' let us know. I've never seen anything but Ball in ww down here.

use whatever you have to elevate your jars from the bottom of the pan. you can use towels, a ring of aluminum foil, canning rings (use the old ones--the ones that aren't good enough to put on jars anymore).
