Spring kale as substitute for broccoli raab

The feral kale in the garden is all sending up bloom spikes. Did y'all know they are a very tasty addition to dinner? Cut the spikes about 8" long, and trim any damaged leaves off. You do have to blanch them to drive off some of the bitter compounds formed when the plant flowers. (To blanch, put the washed "raabs" in boiling water for about 4 minutes, drain and cool in cold water to stop the cooking until you're ready to 'finish' it.) The way PapaVino likes them best is when I heat a tablespoon of butter with a tablespoon of olive oil in a medium-heat saute pan, then infuse the oil/butter with finely chopped garlic. Just as the garlic starts to turn golden, add the blanched raabs and toss them in the oil/garlic to "dress" the spears well. Keep turning and tossing with tongs until they're hot, then splash in a bit of soy sauce (start with 1 tablespoon, and adjust if needed). Remove your raab to a platter and sprinkle lightly with a flaked finishing sea salt. That's is, it's dinnertime.

Darn, I just gave a mess of kale budds to the nugetts. Thought about fixen um up myself, don't know why I walked them over to my girls.

Debs, whether you eat them as raabs or eggs, they're still wonderful. If any more shoots show up as side shoots, share, some for you, some for them. Now that you mention it, blanch the shoots, heat them with seasonings, and slip a fresh 3-minute poached egg on them to 'dress' them in the French way; eat with toast.
